Dr. Itamar Yehuda

I am a lecturer at the Faculty of Sciences and Technology at Tel-Hai Academic College since 2006, and researcher at Educational R & D Unit at Shamir Research Institute since 2015. I received my B.Sc degree in Biotechnology from Tel-Hai Academic College at 2006 and my Ph.D degree in Nutritional Sciences from the Hebrew University of Jerusalem at 2016. My doctoral thesis topic was "characterization of natural substances candidates (phytoestrogens) that replace specific beneficial activities of estrogen in diabetic women". The risk of death from cardiovascular diseases, which are exacerbated by oxidative stress and obesity, is higher in diabetic women. This phenomenon has been attributed to the loss of estradiol-vascular protection. Thus, my research project examined the potential of glabridin, a phytoestrogen, to substitute estradiol regulation of antioxidant enzymes, anti-atherogenic factors and pro-inflammatory factors under high glucose conditions, in vitro and in a novel fatty acid dietary mouse model. Along with my research in nutrition and academic work I have experience in research of educational effectiveness and educational evaluation using several research approaches like the 'mixed method', 'design-based research', etc.
